Summer usually gets me thinking about eating healthier. I try to bump up my exercise routine and eat more fruits and veggies. It doesn’t alway work out that way – (last night I think I drank a whole bottle of wine and ate a whole box of pasta) – but I’m trying! The last couple of days I’ve been having these veggie wraps for lunch and snacks so I though I’d share!
Cut up your favorite veggies! I happen to have tomatoes, cucumber and radishes around so that’s what’s goin’ in the wrap! This is a good way to get rid of extra veggies you don’t know what to do with.
Spread a tortilla with your choice of hummus (I’m using Trader Joe’s Mediterranean hummus). The key ingredient is ground cayenne pepper! Spicy foods help speed up your metabolism and also help with appetite suppression so it doesn’t hurt to add a little spice to your food. I should actually be using whole wheat tortillas but I had these left over from another recipe.
Add the veggies! I had some fresh dill so I added that too.
Can you tell I don’t like tomatoes that much? But I’m trying to be healthy and eat them anyway!
Roll it up and you’re ready to go! These are great for snacks. For lunch I usually have to eat two because they are so light. I’m actually not a huge fan of all veggie dishes ( I love me some meat!) but these are just really good. The cucumber and radishes add a nice crunch. But the hummus and the cayenne pepper are my favorite part!
